What's for dinner tonight at your house?
I'm trying a new salmon recipe with red bell pepper and artichoke hearts served over couscous. What's everyone else planning for dinner? Oh, jeez ... It's already past 6:00. I'd better get to it. The fish isn't even defrosted yet.

I made some easy chicken enchiladas, which I thought were pretty good, with a mexican rice/quinoa mix and some salad greens. I gave up red meat for Lent...and chicken is getting a little old, but this was much better than coating it in bread crumbs and baking it.
Jolynne, your salmon recipe sounds good. I think Friday I will be making fish tacos..yum!

Last night we had creamy chicken florentine and tonight we are going to have chicken fajitas. Last night was super yummy so lets hope dinner tonight is good as well!

Baked chicken chimichangas from Dos Reales. With queso dip and warm tortilla chips. Mmm-mmm good! And I didn't have to wash dishes!
We were celebrating my husband getting a new job. Tomorrow is probably cheese ravioli and garlic toast.

Warm chips and queso is my all time fav. I could eat it everyday.
